The section “Status” on the “About NixOS” page says that “part of GNOME” is available in NixOS. I think this is basically what it said already about 7 years ago. 
Is it still the case that GNOME support is only partial? If yes, what parts exactly are missing?

Yeah, that will need to be updated. GNOME desktop has been complete for
a years now, including lot of the extra apps. Some less used features
might be missing but they are being worked on:
