I made a first step with *-nginx.conf. Maybe, as another user of bat, you want to submit similar patches so that bat plays increasingly nicely with nix-store style configs?
In any case, the work-around, in the meantime, is:
bat -l nginx /nix/store/sm8lcsj94pqsb43ssb7cx3r424zs71p1-nginx.conf
