I did try plasma6 initially, it looked much worse than plasma5. sometimes no login at all, sometimes login worked but got empty panels with no launcher. (for details, see posts from a few days ago)
I’ve now switched to unstable (using flakes + home-manager) but see the same problems:
plasma5 shows a desktop when using x11 (wayland doesn’t work), but I can’t even change the desktop’s background color without making it crash.
plasma6 also doesn’t work at all with wayland. Using X11 I can get a session but without panels or a desktop. I can open a terminal with strg+alt+t and dolphin with windows+e, but must stuff doesn’t work at all. Like if I try to open “systemsettings” from a terminal window, it immediately crashes:

now I’ve tried gnome, which looks like it’s working fine. With wayland. I haven’t used gnome for decades and am missing a lot of KDE features I rely on but I can’t see anything obviously broken.
So my problems seems to be specific to the combination of NixOS + Plasma (both 5&6) + my current laptop (Lenovo ThinkPad P16v Gen1).
NixOS with other desktops works on my laptop, and KDE Plasma works on my laptop using other distributions (have Manjaro running mostly fine, much better than NixOS+Plasma, only some non-desktop related problems).
Now I’m on a Cinnamon X11 session, which I prefer when it’s this or Gnome, but I’d still much prefer Plasma.
The Cinnamon Wayland session works too, but displays a “Desktop” window in the task-bar and has a completely transparent terminal window, so the X11 Cinnamon session seems preferable to me.
Right now I have the problem that in this Cinnamon X11 session doesn’t support selectin different scaling for internal and external monitor.
Maybe this is not a popular opinion, but I had a similar issue with Plasma 6 not working. I downloaded the latest ISO and reinstalled with Plasma Wayland just to see if it worked. Then recreated my flake around the new configuration.nix/hardware.nix that the latest ISO created. Eventually I added the rest of the config from my previous flake but very carefully. I’m not sure what was breaking Plasma 6, but I think I had to remove anything relating to X11 or any apps that depend on X11. The other issue you may be facing is that Plasma 5 and 6 create different configs in your home directory, when you rebuild with different versions, they both look at the same configs. 6 probably adds things that break 5 and vice versa.
