Did you see/try nixpkgs-esp-dev?
May be a little out of date, but works well for me (although I’m doing Rust, which also has its own compiler toolchain fork for Xtensa that I needed to package with Nix [0][1])
Also, FYI, you linked to nixos.wiki instead of the official one (it seems that this is an issue with esp-idf linking to the wrong one, although both wikis link to nixpkgs-esp-dev):
