The unstable channel has none: NixOS Search
What happened?
I’ve heard a mention that search.nixos.org is broken right now, showing only a subset of the items which it’s supposed to show.

I also get an error when adding poppler-utils as a package in my unstable config: error: undefined variable 'poppler-utils'
Weird.

Are you sure that you have the scoping right? Like in pkgs.poppler-utils is the typical thing in NixOS config, isn’t it?
Ah, my bad. Had a typo in the input on the top of my packages using poppler-utils.
They should now show 19 and 20 respectively, after the cleanup and successful data import.
