## Description of changes
This attempts to clarify the true behavior of passw… ord option overrides, as the documentation seems to be wrong (and appears to have been for at least 10 years). These docs also clarify systemd-sysusers quirks that I coincidentally noticed someone happened to file recently [here](https://github.com/NixOS/nixpkgs/issues/307159) as well.
The relevant option docs have been updated, but more importantly I created two new tests to try to show the true behavior of the overrides in their current form. This way if anything ever changes on this front it will be caught and docs can be updated accordingly.
If you want to run the tests I added, you will have to change the maintainer for now as my being added to maintainers is pending [this PR](https://github.com/NixOS/nixpkgs/pull/296562) being merged.
I've not used Nix for very long, so would appreciate someone who has dealt with this code in the past to validate what I've found. @nikstur and @NeQuissimus, perhaps you could both take a look as I've repurposed some of your tests that touch the same areas, so I suspect you'll both be familiar.

## Description of changes
https://github.com/NixOS/nixpkgs/pull/290240 change… d the `ensurePrinter` mechanism such that it uses `lib.cli.toGNUCommandLineShell`. However, it missed to remove single quotes (`'`) that have previously been needed to protect options from the shell, but that are now escaped and passed on to `lpadmin`, thereby breaking `ppdOptions`.
This pull request removes those superfluous quotes and fixes `ppdOptions`.

## Description of changes
In recent JetBrains releases, a `plugin-classpath.t… xt` made its appearance. That file seems to be a cache of some kind that the IDEs use to discover which plugins are bundled with an IDE release.
If that file is removed, there seems to be a fallback mechanism that instead goes through the list of subdirectories in `plugins`. That works rather better for us, as we don’t know how to generate a `plugin-classpath.txt`.

## Description of changes
The current implementation is cumbersome for extens… ion overlays for the
reason that it passes the `passExtensions` attribute set to the user
function; thus, any addition to `pass.passthru.extensions` is ignored.
By adding the `extraExtensions` argument, we allow overlays to easily
add or override pass' extensions without the need of overriding the
`withExtensions` function.
