Fix various issues with building spaCy models. The largest change is that spaCy …3.7.x has switched to using `spacy-curated-transformers` for transformer models in place of `spacy-transformers`. This change adds `spacy-curated-transformers` along with its dependensies `curated-transformers` and `curated-tokenizers`. Fixes the GSettings errors `GLib-GIO-ERROR **: No GSettings schemas are insta…lled on the system (openscad:26805): GLib-GIO-ERROR **: 13:10:37.913: Settings schema 'org.gtk.Settings.FileChooser' is not installed` by adding wrapGAppsHook3 so that the GLib schemas are available at runtime, otherwise it will crash when a file dialog is invoked in an unpolluted environment. This is a proof-of-concept for a multiple-version package. Since nv-codec-hea…ders is a very simple package - it just throws files into the final destination -, it is easily parameterizable. After some experimentation, I decided to put all the packages inside `passthru.versions`. Fix various issues with building spaCy models. The largest change is that spaCy …3.7.x has switched to using `spacy-curated-transformers` for transformer models in place of `spacy-transformers`. This change adds `spacy-curated-transformers` along with its dependensies `curated-transformers` and `curated-tokenizers`. The `services.graphical-desktop` module (code in `nixos/modules/services/misc/gr…aphical-desktop.nix`) is enabled automatically if `services.xserver.enable` or `services.displayManager.enable` is true but this does not cover `phosh`, so enable it manually. My main motivation for this change is that `fonts.enableDefaultPackages` was set to false, unlike with all (most?) other desktop managers, which causes many characters to not be displayed. Since enabling `services.graphical-desktop.enable` also enables `hardware.graphics.enable`, I removed the latter option from the `phosh` module. The `services.graphical-desktop` module also sets `systemd.defaultUnit` to `"graphical.target"` if `services.xserver.autorun` or `services.displayManager.enable` are enabled, with the former option being enabled by default, so I also removed this option from the `phosh` module.
