Fix spaCy transformer models, so that they work again (have been broken for a while). Probably worth backporting to 24.11 too.

Fix various issues with building spaCy models. The largest change is that spaCy … 3.7.x has switched to using `spacy-curated-transformers` for transformer models in place of `spacy-transformers`. This change adds `spacy-curated-transformers` along with its dependensies `curated-transformers` and `curated-tokenizers`.
Besides that, this PR makes some smaller changes to `spacy-models` to make all models build again:
- Transformer models now use `spacy-curated-transformers`.
- `sl_core_news_trf` requires `protobuf` and `sentencepiece`.
- `ja` models require `sudachipy` and `sudachidict-core`
- Loosen the `pkuseg` requirement for `zh` models (0.3 -> 1.0 does not have API changes).

## Description of changes
If `--iac` is passed as parameter, we cannot use th… e `--dbpath` option, or it fails.
If `--iac` is not passed as parameter, then we are in vulnerability scanning mode, and we need to pass `--dbpath`, or the program will try to download the dbpath in the same path as the binary. The binary is in the nix store though, and is not writable, so it will fail. Specifying `--dbpath` to `$HOME/.cache` is a workaround for this limitation.

According to Fcitx 5 wiki, it seems it is always recommended to add `--enable-wayland-ime` or `--gtk-version=4` (which is only supported in chromium/chrome) flag when launching Electron apps to use text-input-v1. It's currently not possible to use agenix for secrets with an immutable filesyst… em because `hashedPasswordFile` does not work with `mutableUsers = false` and the password must be specified with `initialPassword`/`initialHashedPassword`
This PR adds an `initialHashedPasswordFile` option to match the `hashedPasswordFile` option which already exists.
There is some additional work to be done around `systemd.sysusers.enable = true` and false parity.
As shown by `nixos/tests/systemd-sysusers-immutable.nix` `hashedPasswordFile` works for immutable users whereas when not using systemd users `hashedPasswordFile` does not work and we'd need `initialHashedPasswordFile`.
I assume that's actually a bug in sysusers because it won't be possible to change the user's password in the next generation, though I don't fully understand the need for `initialHashedPassword` and `hashedPassword`.

an initialHashedPasswordFile option, using agenix to handle the password is currently not possible without exposing the contents to the nix store using builtins.readFile
